I am trying to work out the ini files to see if that gives a solution, but not sure what to look for and change yet. Then at the start (on the cart) i cannot see much, and it seems the graphics are completely overlapping everything, and the guys on the cart are like faint shadows? What I see is exactly what you said, a super zoomed main menu. I have tried doing the same, however sadly its not giving the same results. Title and loading screens are also super zoomed in. The framerates and overall performance in extended resolution are not very good right now either. It is essentially unplayable in an extended resolution right now though because the ingame menus are extremely zoomed in and unusable. You can also set a custom rez in the Skyrimprefs.ini found in MyDocuments>MyGames>Skyrim. if the resolution section is blank then it should run at the combined resolution for your setup. If you open the game launcher and go to options reset the display options to default.
